Winemaking

Destemming: Total, with a small percentage of whole clusters in the Loureiro
Maceration: In amphora (talha) with full skin contact for 12 weeks
Fermentation: Spontaneous, with indigenous yeasts, in amphora at 15ºC
Chestnut flowers: 500 g added, crushed into the must, following monastic tradition
Malolactic fermentation: Yes
Ageing: In amphora until early January; pressed in January, bottled in February with direct tirage
Finishing: Unfined, unfiltered, may contain natural sediment

Residual sugar: 0.3 g/L
Total SO₂: 25 mg/L at bottling
