Description
A new project that represents the very essence of micro-production of traditional wines in one of France’s most beautiful, unique and hotly contested regions: the Jura. With 10 years of experience alongside one of Champagne’s most passionate producers, Vincent Laval, artisan vigneron Bruno Bienaimé secured a mere 3.2 hectares to farm organically, with the utmost respect for terroir. The result: wines of pure, vibrant energy, evoking one of our favourite producers in the region — Domaine Labet.

Grape Variety & Viticulture
100% Chardonnay from the commune of Ardon, grown on Jurassic limestone and marl soils. The vines are cultivated with minimal intervention, respecting biodiversity and the natural balance of the soil. Manual work and low yields ensure an expression of terroir with maximum fidelity.

Vinification & Ageing
Spontaneous fermentation with indigenous yeasts. The wine is aged in neutral vessels on fine lees, with no bâtonnage, no fining or filtration, and only minimal sulphur added. The style is precise, dry and linear, with a focus on the natural minerality and tension of Jura Chardonnay.

Tasting Notes
A Chardonnay of pure identity, structured by vibrant acidity and a limestone-driven profile. Shows tension, fluidity and depth, with no excess. The minerality leads, revealing notes of wet stone, white tea, lemon peel and a persistent salty finish. A wine of purity and character with an austere elegance. (It greatly benefits from air — opening a day in advance is not excessive!)
