Wine

The Vigna San Giuseppe is the flagship wine of Cavallotto — a Riserva born from the heart of the estate’s holdings, in the iconic MGA Bricco Boschis, at 335 metres elevation. This historic parcel, 3.78 hectares planted in 1961 and facing southwest, produces Nebbiolo of exceptional concentration and balance.

Vinification is entirely traditional: spontaneous fermentation with native yeasts, followed by long maceration (20–35 days) in large Slavonian oak casks (botti) using the “cappello semisommerso” method. The wine is then aged for 4 to 5 years in large botti, true to the classic style of Barolo built for long cellaring.

The result is a red of stunning depth and precision, with firm yet elegant tannins, monumental structure, vibrant acidity, and a classical bouquet of black cherry, liquorice, tobacco, and dried rose petals. A Barolo with decades of life ahead.
