Winemaking
Crafted exclusively from Meunier grown on a steep limestone slope in Barzy-sur-Marne, La Capella 2020 is vinified with total natural integrity:
-
No chaptalization
-
Spontaneous alcoholic and malolactic fermentations with native yeasts
-
No fining, no filtration
-
All movements in the cellar follow the biodynamic lunar calendar
The base wine was aged for 10 months in used oak barrels. Bottled in 2019 on a “fruit day” according to the lunar calendar.
Style and Profile
A Brut Nature Champagne of depth, purity and mineral tension. La Capella reflects its terroir with striking clarity. The southern exposure and shallow limestone soils lend it intensity and saline focus.
Meunier contributes structure and character, with notes of dried fruit, green apple skin and a subtle earthy edge. Direct and vibrant on the palate, with a long, persistent finish marked by mineral salinity.
