“Possibly the most consistent elite producer in Kamptal, if not in all of Austria”, according to one of the most influential sommeliers in the world, Rajat Parr. The Hirsch house has been in Kammern for 500 years, and since 1878 the farm has been cultivated by the family, now in the 5th generation. Biodynamics here is taken very seriously by Johannes, and the style of the wines is one of sheer purity in the representation of some of the best crus in the country, such as the fabulous Heiligenstein, with its primary rock, granite and gneiss soils. How far can Riesling and Grüner Veltliner go in Austria? The answer is Hirsch.
Wine:
RESPEKT certified biodynamic. The slopes of this vineyard extend eastwards from Heiligenstein Mountain; they have a distinctly southern aspect and an average slope of about 11%. The low areas have highly calcareous chernozem soils with crystalline rock fragments, derived from the underlying loess, which in turn overlie the gravel beds. The upper parts of the slopes consist predominantly of gneiss, and occasional loess remains. The overlying soil is a chalky brown earth with varying proportions of coarse material.
Harvest in October. Whole bunch pressing, fermentation only with natural yeasts. Maturation taking place both in stainless steel tanks and in large vats. The wine rested on its lees for around 6 months.
