Winemaking
An absolute terroir Champagne, this cuvée comes from a single parcel in Connigis, located in the Surmelin Valley (Vallée de la Marne).
Spontaneous fermentation with native yeasts. No chaptalization, no fining, no filtration — all in harmony with the biodynamic lunar calendar. Natural malolactic fermentation.
The base wine aged for 10 months in used oak barrels. Bottled in 2019 on a “fruit day” according to the biodynamic calendar.
Tasting Notes
This rare Meunier delivers extraordinary depth and purity. The nose is elegant and subtle, revealing pear, white flowers, green apple, and a light touch of brioche.
On the palate, it’s precise and incisive, with a creamy texture, cutting freshness and a strong mineral salinity. The absence of dosage brings out the wine’s raw energy and terroir expression.
