It is only a matter of time before Domaine Pavelot, a family-run and artisanal winery, begins to make waves among Burgundy connoisseurs. The seventh generation, Luc & Lise, are responsible for the development of this surprising domaine in Pernand-Vergelesses, which produces whites and reds with equal capacity to move us. The inspiration for achieving excellence was also fuelled by experiences outside Burgundy: Luc worked in California, at Navarro Vineyards, and Lise at the spectacular Domaine Dagueneau, in the Loire.

Wine:
0.95 hectares of vineyards over 50 years old in andslopes with exceptional exposure, to the south and southwest, located behind and above the village. The soils are thin-layered and marked by small pebbles and composed of clay deposits on a base of marl and limestone. Hand-picked grapes fermented in oak barrels with indigenous yeasts. Aged for 12 months in oak barrels, 40% new, and a small part in stainless steel. The Élevage is finished in stainless steel for 6 months.

Class, just the right amount of fruit and plenty of terroir in this incredible discovery of ours. One of the best wines from this incredible, small and unknown domaine. The premier cru Sous Frétille has perfect exposure, which brings great power to this wine, but the shade caused by its position behind the Corton hill mitigates the effects of the morning sun and evokes great freshness in this glorious wine. The very well-crafted texture shows itself in the mouth with creaminess, which is soon cut by an enormous electric charge of vibrant acidity that carries pure limestone marl.
