Production

Made with an infusion of lemongrass sourced from Sri Lanka, organic cane sugar, and Izola mineral water (from the Izarraitz mountain range, Basque Country). Fermentation is started with carefully maintained cultures of bacteria and yeast (SCOBY), combined with a small portion of a previous Ama batch to ensure microbial consistency.

After primary fermentation, a second fermentation takes place in bottle. The bottles rest for six months on lees before disgorgement, developing fine bubbles and added complexity.


Tasting Notes

Aromas of spiced citrus, white rose petals, a hint of galangal, and kaffir lime leaves. On the palate it is light, fresh, and aromatic, with vibrant acidity and a delicate texture.
