AMA Brew Bost
Naturally fermented through exclusive techniques inspired by the ancestral pétillant naturel method, AMA combines origin teas and botanicals from small family farms with pure spring water from the Basque Country.
Production
AMA Bost is made from an infusion of Jasmine Silver Needle tea (China), which is then fermented by introducing carefully cultivated symbiotic colonies of bacteria and yeast (SCOBY), together with dissolved organic cane sugar and local Izola mineral water, sourced from the Izarraitz mountain range in the Basque Country.
A small portion of a previous batch is added to ensure consistency. The second fermentation takes place in bottle, where each lot ages for six months on lees before disgorgement and release. This process allows the development of fine bubbles and complex flavors.
Tasting Notes
Crisp aromas of white pear, rose, dried jasmine, and acacia.
Fresh and elegant on the palate, with vibrant acidity and a dry finish.
