If Domaine Marquis d'Angerville considered expanding beyond the Côte d'Or, it is because something very special was about to happen. The conception of Domaine du Pélican in the Jura took four years of work until Yves Herody, the geologist responsible for mapping the soils of d'Angerville in Burgundy, found the most precious aspects of the region – including vineyards from Jacques Puffeney. When Jura and Burgundy merge, a tremendous amount of energy, emotion, and refinement is triggered with each bottle opened.


Description
One of the boldest and most fascinating expressions of Savagnin. The Macéré is vinified like a red wine: the grapes ferment with the skins for two weeks, reaching temperatures of up to 30°C. This skin maceration approach reveals the more tactile and structured side of the grape, while maintaining all of its typical vibrancy and energy from the Jura.

The wine ages in used Burgundy oak barrels, with a small portion in stainless steel. The result is a deep, textured white, with a slight natural turbidity, notes of orange peel, dried spices, chamomile flowers, and a well-defined salty finish. A different Savagnin, but absolutely true to its terroir.

• Fermentation: with indigenous yeasts, in contact with the skins for 14 days
• Fermentation temperature: up to 30°C
• Gentle pressing and transfer to barrels
• Aging: primarily in used Burgundy barrels, small part in stainless steel
• Unfined, unfiltered

Tasting Notes
All the enchanting complexity extracted from the skins: spiced bitter orange, green apple, dried herbs, and a smoky touch reminiscent of lapsang tea. The aroma is wild and free, even more intense the next day.

On the palate, dry, with a chewable texture and rich notes of apricot and bitter orange. Deep and long, with moderate, spicy tannins – both in flavor and sensation. Like other top Savagnins, it is intensely salty, fresh, and vibrant. Persistent, complex, and captivating finish.

Ideal with earthy-flavored and rich-textured dishes:
• Wild mushroom risottos
• Aged cheeses (Comté, Tomme, Mimolette)
• Fish with spices or oriental-inspired dishes
