Pazo da Sinsela – Exclusivity and Origin in the Heart of Galicia
Located in Sisán, Ribadumia, very close to the Umia River, the Pazo da Sinsela estate is home to around three hectares of vines in a unique terroir. This project is the result of a partnership between two of the most respected names in Spanish wine, Rodrigo Méndez and Raúl Pérez, who have taken on the management of the vineyards and winery for a 20-year period.

Working exclusively with the grapes grown on the estate itself, the goal is to express the authentic character of this special place. The inaugural vintage, 2021, was limited – only 7,000 bottles produced due to the still-reduced yield of the vines. However, the expectation is to reach up to 15,000 bottles per year as the plants reach their full potential.

The soils are rich in silt, which favors moisture retention and provides natural freshness to the grapes (much like limestone, as our friend Parra explained) – a differentiating factor that translates into wines of great elegance, minerality, and balance.

Grapes and Viticulture
100% Albariño from several plots on the estate, grown in granitic soils with a good mix of silt from the nearby Umia River. The viticulture is carried out carefully and manually, reflecting the mineral and saline character of the region. The grapes are hand-harvested and fermented with indigenous yeasts.

Winemaking and Aging
Spontaneous fermentation in French oak barrels of 225, 300, and 500 liters. The wine aged for 12 months in these same barrels, on fine lees, without corrective interventions. The oak used is subtle and respects the varietal purity and expression of the granitic terroir.

Tasting Notes
An Albariño of austere and deep character, where the soil takes center stage rather than the fruit. The nose is restrained and mineral, with saline hints, citrus peel, and wet stone. On the palate, it shows great freshness, vibrant acidity, and a marked saltiness. True to the classic Salnés style, with sophistication and precision.

Critical Score
94 points – Robert Parker (Wine Advocate)
"More about the soil and the granite, representing the Salnés with notable saltiness and high minerality."

Food Pairing
Oysters, Bulhão Pato clams, ceviche, scallop carpaccio, fresh goat cheese, sushi, or sashimi.

Aging Potential
From 2023 to 2030. Enormous bottle aging potential, revealing greater depth with time.
