Luís Lopes is one of the most talented winemakers in Portugal, and in his vibrant youth, he has already accumulated an experience in vineyards, wineries and tastings that few professionals in the world have. From Comte Lafon in Burgundy to almost a decade at the helm of the classic wines of Quinta da Pellada, to New Zealand and leading projects as different and challenging as the wines of Alvear in the Spanish Estremadura, the humble Luís always surpasses himself. His personal project Moreish reveals his most spontaneous side, with wines that are as unusual from grapes and techniques discovered in his travels around the world, as they are delicious, to make you want more!

Wine:
This beautiful red wine from Bairrada is a co-fermentation of 20% Trincadeira and 80% Castelão Nacional (Camarate/Negro Mouro) from two vineyards in the Souselas area. Trincadeira comes from a 40-year-old vineyard and Camarate is a little younger, around 30 years old. The vineyards are on clay-limestone soil, with many limestone and white marl outcrops. Especially the Trincadeira vineyard, which is more on rock. Cunha do Camarate has deeper, clayey soil.

The grapes were 100% destemmed without crushing the berries. Spontaneous fermentation, with indigenous yeasts, took place in a wine press with gentle hand-treading, twice a day, just to keep the grapes moist. When fermentation was complete (10/12 days), the grapes were pressed and malolactic fermented in stainless steel. The wine was transferred to a used barrel (in the singular, as there was only one) of 400 liters, where it aged for 12 months. It was bottled directly without fining or filtration.
