It is only a matter of time before Domaine Pavelot, familiar and craftsman in its structure, begins to transit among Burgundy connoisseurs. The seventh generation, Luc & Lise, is responsible for the evolution of this surprising domaine at Pernand-Vergelesses, which produces whites and reds with equal capacity to move us. The inspiration to achieve excellence was also fueled by experiences outside Burgundy: Luc worked in California, at Navarro Vineyards, and Lise at the spectacular Domaine Dagueneau, in the Loire.
Wine:
1.92 hectares of Pinot Noir vines over 25 years old. Grapes harvested by hand and fermented in concrete tanks with indigenous yeasts. Elevage of 10 months in oak barrels, 15% new, and a small part in stainless steel. Élevage finishes in stainless steel for 6 months.
