Volnay may deliver celestial elegance — finesse and the beauty of delicate fruit (often dubbed the “Chambolle-Musigny of the South”). And in our search for wines in this pure style and at more accessible prices (still), we turn to another specialist: Pierrick Bouley. A sixth-generation vigneron, Pierrick works biodynamically with vines averaging 60 years old. As he says: “I’m a vigneron before I’m a winemaker.” There are no additions or manipulations in his cellar, with zero sulfur used until bottling.
Tasting Notes
The Pommard 2021 comes from a tiny 0.5 ha parcel between Chanlins and Lambots, on a south to southeast-facing slope. Classic clay-limestone terroir lends structure, minerality and tension to this Pinot Noir.
Fermentation is meticulous, carried out without sulfur until after the end of the alcoholic fermentation, ensuring pure fruit expression. After manual harvest and strict selection, fermentation begins spontaneously in tank, then the wine is transferred mid-process into barrels for 12 months of ageing. Only at bottling is a small touch of SO₂ added.
