A historic farmhouse with spectacular heritage of old vines was acquired by a group of friends in 2021. Domínio do Açor is inserted in a fascinating atmosphere next to the medieval village of Oliveira do Conde. “Domínio” in allusion to the philosophy of making great Dão terroir wines with “domaine” grapes. And “do Açor” evoking geography, facing the Serra do Açor. With the consultancy of the master of the terroir Pedro Parra and the oenology of the talented Luís Lopes, with passage through Comtes Lafon in Burgundy and Quinta da Pellada in Dão, the style is one of elegance, freshness and granitic minerality.

Domain of Açor Vinha Celta Jaen 2021:

VARIETY COMPOSITION100% Jaen da Celta Vineyard of 1.7ha, 33-year-old plants.

SOIL CHARACTERISTICS: Granitic. Very well composed between soil and stone, more precisely between the lime or “silt” typical of granitic soils, with alterite or rocks degraded by chemical and physical processes of weathering, in addition to quartz and the granite parent rock. A level 5 alterite prevails throughout the vineyards in the Domain of Açor.

ENOLOGY:Grapes are crushed in a wine press, partial destemming of 70%, followed by fermentation in an open wine press, at a temperature of approximately 20-24 degrees. Infusion more than extraction, with the blanket worked manually, 9 days of maceration. In this environment a semi-carbonic maceration takes place. Malolactic in vat. Press wine is not incorporated into the final batch. Stage on fine wood lilies for 16 months. Low addition of sulphites before bottling (58mg/l of total sulfur dioxide).

AGEING11 months in a used 400L barrel from 2019, French oak.

STORY ESTIMATE: 7 years.

ORGANOLEPTIC CHARACTERISTICS: Purpura bright. The red and blue berries explode on the nose, enveloped in granite dust and pungent spices, in a profile reminiscent of a “raw” Morgon. The palate is equally vibrant, mineral and of medium complexion, endowed with a persistent and juicy wild fruit finish.

ENOGASTRONOMIC GUIDELINESBeira sausages, spare ribs rice in garlic vinaigrette, braised gizzards, suckling pig with tropeiro beans , country chicken with ora-pro-nobis.
