Production
AMA® No. 4 is produced from an infusion of Golden Lily Milk Oolong tea, cultivated in Taitung, Taiwan. Combining ancestral techniques with contemporary fermentation science, the process is carried out with precision and patience, using specific cultures of yeasts and bacteria and pure spring water from the Basque Country.
After infusion, the liquid ferments naturally with minimal intervention, in contact with the lees, and is then bottled, where it continues to evolve. As it ages, the bubbles become finer and the texture more elegant, revealing increased aromatic complexity over time.
Tasting Notes
Light golden color. On the nose, delicate notes of caramel, milk tea, and cooked chestnuts. On the palate, soft bubbles, rounded structure, and a full body. A subtle and refined profile, ideal for those seeking a new and distinctive experience.

Golden Lily Milk Oolong — Taitung, Taiwan
A rare variety, this tea sits between green and black teas, placing it within the category of blue oolongs. Grown in the hills west of Taitung, it displays naturally milky and floral aromatic characteristics, with a velvety texture and unique creamy notes.

Serving
Serve in a white wine glass between 9–11 °C. Open with care to preserve the bubbles. Natural sediment at the bottom of the bottle (from fermentation) may be poured or left behind, according to preference.
