AMA Hiru
Fermented Tea Beverage – 2.5% Vol. Alc.
Ingredients
Malawi Green & White Peony Tea (Malawi), Organic Cane Sugar, Spring Water (Izola), SCOBY
Production
Ama Hiru is produced through natural fermentation, using carefully cultivated symbiotic colonies of yeast and bacteria (SCOBY). The tea infusion is prepared with mineral waters from the Izarraitz massif (Basque Country), to which organic cane sugar is added, along with a small proportion of a previous fermentation (backslopping) to ensure consistency.
The second fermentation takes place in bottle, where the liquid remains for six months on lees before disgorgement, creating fine bubbles and a striking aromatic complexity.
Tasting Notes
Pale straw-yellow in color, with fine and persistent bubbles. On the nose it reveals tropical aromas of papaya, hay, and dried herbs. The palate is expressive and enveloping, with notes of ripe fruit, gentle spices, and a refreshing, elegant profile.
Food Pairings
Ideal as an aperitif or paired with Asian cuisine, ceviche, fresh salads, oysters, lightly spiced dishes, or fruit-based desserts with fresh herbs.
Serving
Serve between 9–11 ºC in a white wine glass. Open carefully to preserve the bubbles.
