Micro-production of extremely mineral, firm and highly expressive Champagnes from the best terroirs of the Vallée de la Marne. The couple Stéphanie and Julien bring more than 20 years of expertise in Champagne vineyards, acquired while providing specialist consultancy in organic and biodynamic viticulture, and they use it wisely to communicate their terroirs through totally exciting Champagnes, full of “drama factor”. Everything is handmade and made with heart!
Wine:
Plot planted in 1980, in Barzy-sur-Marne within the Vallée de la Marne, which benefits from an optimal southern exposure, on a fairly steep hill of 40%. Limestone bedrock with very little soil on top, between 10 and 40 cm, composed of marl and silt.
Meunier without chaptalization, natural alcoholic fermentation using indigenous yeasts, natural malolactic fermentation, without filtration or fining, regular movement according to the lunar calendar. Base wine aged for 10 months in barrels. Bottled in 2019 on a fruit day. Total SO2 of 37 mg/l and zero dosage. Only 1200 bottles made and 30 magnums.
