The most original and exciting Rosé of Provence is produced on a 17th-century estate in the schist hills of Maure, just 800 metres from the Mediterranean, and has been in the hands of the Roux family for almost 230 years. The rare and ancient Tibouren grape variety, which accounts for less than 2% of Provençal vineyards, and the ageing in centuries-old wooden foudres under a perfumed veil of yeast, the “fleurette”, contribute to a unique style, the complete opposite of the easy, uncomplicated fruit of most rosés in the world. Independence, character, history and the “drama factor” are not lacking in Clos Cibonne!
Wine:
A blend of 85% Tibouren, 10% Grenache and 5% Syrah from vineyards overlooking the sea, 800 meters away, on a hill part of the Maures mountain range. The sea breeze prolongs the ripening of the grapes, retaining their freshness, as does the good exposure to the frequent winds of the region. Organic cultivation and soil work on 40-year-old vineyards. Calcareous and schist soils.
Fermentation in 300-liter wooden vats, where it ages for 10 months without a veil, unlike of the line tradition and vignette, two rosés made sous vouile, as in Jura.
