The most original and exciting Rosé de Provence is born in a 17th century estate. XVII in the schist hills of Maure, just 800 meters from the Mediterranean, in the hands of the Roux family for almost 230 years. The rare and ancestral Tibouren variety, whose planting accounts for less than 2% of Provençal vines, and aging in centuries-old wooden “foudres”, under a fragrant veil of yeast, the “fleurette”, contribute to a unique style, totally o the opposite of the easy, uncomplex fruit of most rosés in the world. Independence, character, history and the “drama factor” abound at Clos Cibonne!
A blend of 90% Tibouren and 10% Grenache from vines overlooking the sea, 800 meters away, on a hill part of the Maures mountain range. Organic cultivation and soil work in the 60-year-old vines, the oldest on the property. Schist soils.
Fast-pressed rosé fermented in stainless steel with indigenous yeasts. 12-month élevage under fleurette (a thin veil of yeast, similar to the process in Sherry or Jura wines - sous-voile) in barrels that are over 100 years old. This cuvée is generally the longest-lasting and rewards those who have the patience to save a few bottles to feel its evolution over the years.
