The most original and exciting Rosé of Provence is produced on a 17th-century estate in the schist hills of Maure, just 800 metres from the Mediterranean, and has been in the hands of the Roux family for almost 230 years. The rare and ancient Tibouren grape variety, which accounts for less than 2% of Provençal vineyards, and the ageing in centuries-old wooden foudres under a perfumed veil of yeast, the “fleurette”, contribute to a unique style, the complete opposite of the easy, uncomplicated fruit of most rosés in the world. Independence, character, history and the “drama factor” are not lacking in Clos Cibonne!
Wine:
A blend of 90% Tibouren and 10% Grenache from vineyards overlooking the sea, 800 meters away, on a hill part of the Maures mountain range. Organic farming and soil work on the 60-year-old vineyards, the oldest on the property. Schist soils.
Quick-pressed rosé fermented in stainless steel with indigenous yeasts. Aged for 12 months under fleurette (a thin veil of yeast, similar to the process in Sherry or Jura wines - under-the-veil) in barrels over 100 years old. This cuvée is generally the longest-lived and rewards those who have the patience to keep a few bottles to feel its evolution over the years.
