The maxim that “the best wines are born in the vineyard” is inexorable, and it was no coincidence that Largillier, Jérôme Coessens’ iconic vineyard, was chosen to feed one of the most sought-after “cult wines” in the world, Guillaume Selosse’s Champagne. Our Coessens is a small grower from the Côte des Bar, in the south of Champagne, exclusively dedicated to Pinot Noir planted in Largillier, where the family has been around for more than 5 generations, and which shares the same limestone soil profile from the Kimmeridgian period found in the best grand crus of Chablis.
Winemaking with destemmed bunches, which lasted 15 days maceration. Aged for 36 months in 228-liter barrels. Not filtered or fined. Only 571 bottles produced.
