A historic farm with a spectacular heritage of old vineyards was acquired by a group of friends in 2021. Domínio do Açor is located in a fascinating atmosphere next to the medieval village of Oliveira do Conde. “Domínio” refers to the philosophy of producing great terroir wines in Dão, with grapes from the “domaine”. And “do Açor” evoking the geography, facing the Serra do Açor. With the consultancy of the terroir master Pedro Parra and the oenology of the talented Luís Lopes, who has worked at Comtes Lafon in Burgundy and Quinta da Pellada in Dão, the style is one of elegance, freshness and granite minerality.

Açor Encruzado Domain 2022:

GRAPE VARIETIES COMPOSITION: 100% Nascente vineyard crossroads (6.4ha), 33-year-old plants.

SOIL CHARACTERISTICS: Granitic. Very well composed of soil and rock, more precisely between the silt typical of granite soils, with alterites or rocks degraded by the chemical and physical processes of weathering, in addition to quartz and granite bedrock. Level 5 alterite predominates throughout the vineyard of Domínio do Açor.

ENOLOGY: Total destemming and crushing in a pneumatic press, followed by decantation and fermentation with indigenous yeasts in barrels at a temperature between 18-22°C. Aged on fine lees for 11 months in a reducing environment without the addition of sulphites. Complete malolactic fermentation. Low addition of sulphites before bottling (56mg/l of total sulphur dioxide). Natural decantation, the wine was not clarified or filtered, and may present deposits.

INTERNSHIP: 11 months in barrels (03 new 500L barrels, two French oak and one Austrian/German oak, and 1 used 225L barrel from 2014 French oak).

CUSTODY ESTIMATE:  20 years.

ORGANOLEPTIC CHARACTERISTICS: Intense lemon in color. A great Encruzado from Dão, remarkably complex, with layers of yellow and citrus fruits, herbs, wild flowers and a touch of resin and almonds, all framed by noble, sophisticated wood and brushed with a delicate smoky reduction. In the mouth it is voluminous, but firm and very long, with the fruit supported by a striking granite minerality.

ENOGASTRONOMIC GUIDELINES: Rice with prawns, roast veal Lafões style, grilled pork secrets, veal hand with grains, ribs with Minas Gerais canjiquinha, free-range chicken with okra.
