It is only a matter of time before Domaine Pavelot, a family-owned and artisanal estate, begins to gain recognition among Burgundy connoisseurs. The seventh generation, Luc and Lise, are responsible for the evolution of this remarkable domaine in Pernand-Vergelesses, producing both whites and reds with an equal ability to move us. Their pursuit of excellence has also been fueled by experiences outside of Burgundy: Luc worked in California at Navarro Vineyards, and Lise at the prestigious Domaine Dagueneau in the Loire.

Wine:

The Domaine Pavelot Pernand-Vergelesses 'Les Vergelesses' 1er Cru 2022 comes from one of the estate's most emblematic parcels, located southeast of Pernand, on a gentle slope with excellent exposure to the east. This 30-year-old Pinot Noir vineyard sits on pure clay soils with fine clay loams and a high presence of limestone stones—terroir that promotes concentration and structure.

This is the most powerful red wine in the Pavelot range, standing out for its tannic richness, aromatic intensity, and remarkable aging potential. The aromatic profile is dominated by ripe red fruits, blackcurrant (cassis), and kirsch, accompanied by fine spices.

The vinification involves destemming (without the stalks) to preserve balance and avoid excess extraction. Fermentation takes place in open cement tanks with indigenous yeasts, after a 3-5 day pre-fermentation maceration. The extraction is carried out by manual pigeage and gentle remontages.

The élevage lasts for 12 months in French oak barrels (40% new), followed by 4 months in stainless steel for integration. The wine is bottled at the estate without filtration.
