Context

Sauvignon Blanc Cru Selection 2021 is a refined and deeply terroir-driven interpretation of the variety, born between two borders that share the same geological and cultural identity: Collio (Italy) and Brda (Slovenia). The grapes come from two distinct crus — Podgredič (IT) and Jordano (SLO) — combining complementary exposures, soils, and altitudes to create a Sauvignon Blanc of great elegance, minerality, and longevity.

Produced according to organic and biodynamic principles, this wine moves away from the more obvious, exuberantly aromatic expression of the grape, favoring texture, depth, and precision.

Vinification

Fermentation is spontaneous, with two days of skin contact, in a 5,000-liter stainless steel tank.
After the short maceration, the wine is gently pressed using a pneumatic press, preserving purity and finesse.

Aging

  • 14 months on fine lees in conical oak vats (tino) of 2,500 liters

  • Minimum of 6 months in bottle before release

  • Bottled in November 2022, without fining or filtration

Tasting Notes

Clear wine with a medium golden color. On the nose, it shows an enveloping and elegant profile, with creamy notes of quince, summer herbs, a subtle touch of boxwood leaf, and citrus, beautifully integrated with the oak. On the palate, it is silky and precise, with flavors of green papaya, lemon oil, and a hint of rosemary, supported by fine acidity and a long finish. A mineral and distinctive Sauvignon Blanc in the Brda style, driven more by texture and depth than by aromatic exuberance.
