AMA® No. 5 — Jasmine Silver Needle Tea
1.5% vol
AMA® No. 5 is handcrafted from Jasmine Silver Needle white tea, one of the most delicate and historically prestigious varieties in the world of tea.
Naturally fermented using exclusive techniques inspired by the ancestral pétillant naturel method, AMA combines teas and botanicals of origin, sourced from small family farms, with pure spring water from the Basque Country.
Designed to be enjoyed chilled (9–11 °C), served in a wine glass, it redefines what it means to drink well — as an aperitif, at the table, or to celebrate special moments shared.
Tasting Notes
Intense and expressive, with aromas of honey, acacia, and white flowers. Fresh and precise on the palate, with an elegant, delicate bubble.
Pale sage-green color.
Origin — Jasmine Silver Needle Tea
Fuding, Fujian, China
Jasmine white tea is an integral part of the history of the Fuding region in Fujian province. For centuries, its consumption was reserved exclusively for the Chinese imperial family.
The variety used by AMA is harvested only from the most tender spring buds. The scenting process is carried out with fresh jasmine flowers over six consecutive nights. Every morning, the previous day’s flowers are removed and replaced with new ones, ensuring exceptional aromatic purity and great delicacy.
Production
After infusion in local spring water, the tea is inoculated with carefully selected cultures of yeasts and bacteria, initiating a slow and controlled natural fermentation.
This process demands precision, patience, and sensitivity — a subtle balance between science and intuition. Bottle aging adds depth, texture, and complexity. This silent alchemy is what defines AMA: a living, complex, and absolutely unique product.
Aging Potential
AMA Impossible Pétillant Naturel is alive in the bottle. Over time, the bubbles become finer, the texture creamier, and the aromatic profile gains depth.
Like a great wine, it continues to evolve after bottling and can be cellared for several years. Patience is rewarded with elegance.
Pairings
A celebration on its own.
A sophisticated and unexpected alternative to Champagne for any celebration.
Serving
Serve preferably between 9 and 11 °C, in a white wine glass.
