La Parcelle — Chevreux-Bournazel
Coteaux Champenois Blanc “7 Cépages” 2020

Context

This Coteaux Champenois Blanc “7 Cépages” 2020 is an absolutely singular still white wine, produced from the seven grape varieties authorized in Champagne — a true manifesto of the region’s genetic diversity and historical identity.

Most of the grapes come from a co-planted vineyard belonging to Vincent Charlot, complemented by Meunier from La Parcelle’s own parcels. Production is extremely limited (just 500 bottles), and the wine is made with an artisanal, rigorous approach, deeply connected to natural rhythms.

Grape Varieties (7 cépages)

Arbane
Meunier
Petit Meslier
Chardonnay
Pinot Noir
Pinot Gris
Pinot Blanc

Vinification

Fermentation is spontaneous and takes place in used Burgundy barrels, allowing for slow, respectful oxygenation of the wine.
This is followed by extended aging of 20 months on fine lees, with bâtonnage carried out according to the lunar calendar, enhancing texture, depth, and aromatic complexity.

The wine was bottled in May 2022, without fining or filtration, fully preserving its substance and original expression.

Tasting Notes

A white wine of great precision and personality. Restrained aromas of ripe white fruit, dried citrus, fine herbs, and a pronounced mineral component. On the palate, it shows concentration, energy, and subtle texture, with well-integrated acidity and a long, deeply mineral and saline finish that lingers with elegance.

Pairings

Particularly interesting with:

  • poached oysters

  • broccoli and green vegetables

  • fresh nuts (hazelnut, almond)

  • refined vegetable-driven cuisine

  • delicately prepared seafood dishes
