This small domaine in the south of Champagne celebrates the power of its old vines (up to 80 years old) with sustainable viticulture, free of any chemicals and certified by AMPELOS since 1996. The terroirs of Celles-sur-Ource, in the Aube, are so magical that Cistercian monks once cultivated vines on the same hills worked today by the eighth generation of vignerons of the Gerbais family. The brilliant Aurélian Gerbais brought positive changes, such as experiments with biodynamics, the use of mulch, ploughing the land with horses, the release of sulphites and “experimental cuvées”.
50% Pinot Noir + 25% Pinot Blanc + 25% Chardonnay. Vineyards rooted in Kimmeridgian soil, composed of marl and limestone, located exclusively in the village of Celles-sur-Ource, in the heart of the Côte des Bar. Complete malolactic fermentation, the wine remains on the lees for 10 months and after the second fermentation in the bottle, it remains for a further 36 months. Dosage: Extra-Brut: 3 g/L
