The small domaine south of Champagne enhances the power of its old vines (up to 80 years old) with sustainable viticulture, free of any chemical and certified by AMPELOS since 1996. The terroirs of Celles-sur-Ource , in the Aube, are so magical that the Cistercian monks already cultivated vines on the same hills worked today by the eighth generation of vignerons of the Gerbais family. The brilliant Aurélian Gerbais brought about positive changes, such as experiments with biodynamics, the use of vegetation cover, plowing the land with horses, the release of sulphites and “experimental cuvées”.

Complete malolactic fermentation, wine stays on lees for 10 months and after the second fermentation in bottle, remains for another 36 months. Dosage: Extra-Brut: 3 g/L
