This small domaine in the south of Champagne showcases the power of its old vines (up to 80 years) through sustainable, chemical free farming, AMPELOS certified since 1996. The terroirs of Celles-sur-Ource, in the Aube, are so remarkable that Cistercian monks were already growing vines on the same slopes worked today by the eighth generation of the Gerbais family. The brilliant Aurélian Gerbais has brought positive change, from biodynamic trials to cover crops, ploughing with horses, sulfite-free bottlings and experimental cuvées.

Description
Champ Viole is a singular cuvée of pure Chardonnay, from a historic terroir chosen centuries ago by monks for its ideal position and privileged sun exposure. The Kimmeridgian soils give it a unique mineral depth and elegant precision.
The Champagne shows a profile of great purity: notes of lemon blossom, green apple, wet chalk and fresh almonds. On the palate it combines structure and verticality, with vibrant acidity and a saline finish. A Blanc de Blancs carved from stone, with great finesse and energy.
