This small domaine in the south of Champagne showcases the power of its old vines (up to 80 years) through sustainable, chemical free farming, AMPELOS certified since 1996. The terroirs of Celles-sur-Ource, in the Aube, are so remarkable that Cistercian monks were already growing vines on the same slopes worked today by the eighth generation of the Gerbais family. The brilliant Aurélian Gerbais has brought positive change, from biodynamic trials to cover crops, ploughing with horses, sulfite-free bottlings and experimental cuvées.

Description
Grains de Celles is Pierre Gerbais' signature cuvée, a terroir Champagne born exclusively from the Kimmeridgian soils of the village of Celles-sur-Ource. Its unusual composition, with a generous share of Pinot Blanc, gives it a delicate, deeply expressive character.
In the glass, it reveals notes of baked apple, acacia blossom, fresh almond and ripe pear. The mousse is fine and lively, and the palate combines creaminess and tension, finishing with mineral precision and refreshing acidity. A Champagne of great elegance, made to impress both at the table and at moments of celebration.
