Description
Sourced from vines planted between 1969 and 1978 by the grandfather of David and Arnaud Lavantureux, ‘Les Fauconnieres’ is a rare Pinot Noir from one of Burgundy’s coolest zones — near Chablis. Here, the expression of Pinot Noir is vibrant, luminous, and deeply mineral — a red reflection of the Chablisien limestone.
The grapes are fully destemmed and fermented over six weeks in stainless steel tanks. The wine is then aged for one year, 75% in used barrels and 25% in stainless steel, preserving both purity of fruit and the tension of the terroir. Sulfur is added only at bottling.
