It shows itself without shame, confident of its vitality and freshness. It is untimely, citrusy, controversial. First it creates disorder, sows doubt. It is made of two types of fermentation, two distinct stages. Then it is renewed, painted stainless steel and thrown into the void. Without fear.
Winemaking
Hand-picked. This wine is the result of two types of fermentation: initial fermentation with temperature control and co-fermentation in used French oak barrels. Battonage for 12 weeks. Aged for 10 months with 40% of the batch in 600L French oak barrels (1 and 2 year old barrels), the remaining 60% aged in stainless steel in a always full tank for 2 years on lees.
