Winemaking

Foot treading of whole bunches in calcatórium (granite basin) for 3 hours followed by pressing in a vertical press.
The must flows by gravity into cement vats in an underground cellar with optimal natural temperature and humidity conditions. Spontaneous fermentation takes place without temperature control. Aged for 1 year in cement vats.
