Ageing

Produced using the Traditional Method. After three years of ageing on fine lees in stainless steel, with weekly bâtonnage, the liqueur de tirage was added to initiate the second fermentation in bottle.
This was followed by 9 months of bottle-ageing on lees prior to disgorgement.


Tasting Notes

Fine, elegant bubbles and vibrant acidity lead into a fresh, juicy aromatic profile marked by red berries and wild forest fruits.
A subtle meringue note evokes classic summer desserts like Eton Mess.

The finish brings more savoury and complex layers: dried flowers, rose petals and hay, all wrapped in a long, dry and deeply gastronomic aftertaste.
