Valdespino Palo Cortado Cardenal V.O.R.S is simply stratospheric. There is terroir in Jerez, and it comes from the magnificent Macharnudo Alto vineyard. Cardenal is composed of the finest wines from the barrels of the ninth criadera of the soleras of the beautiful Fino Inocente and the fantastic Amontillado Tio Diego, which are fortified at 18° of alcohol to stop the flower development. This blend enters the historic solera of Palo Cortado Viejo CP (Calle Ponce) for further aging and is bottled as VORS (Vinum Optimum Rare Signatum (or Very Old Rare Sherry)), meaning it is at least 30 years old for legal terms, although in reality it is estimated to be around 50-60 years old.
