Producer
Domaine Pavelot, with a rich family history, is beginning to stand out in the Burgundy wine scene, particularly due to the meticulous work of the seventh generation: Luc and Lise. Located in Pernand-Vergelesses, this domaine, which produces both whites and reds with a unique elegance, benefits from experiences outside Burgundy, with Luc having worked in California at Navarro Vineyards and Lise having spent time at the prestigious Domaine Dagueneau in the Loire. Their relentless pursuit of excellence results in wines that are sure to move any wine lover.
Wine
The Pernand-Vergelesses 'Sous Frétille' 1er Cru 2023 comes from 0.95 hectares of vines over 50 years old, located on exceptional south and southwest-facing slopes, behind and above the village. The soils are fine, with small pebbles, consisting of clay deposits over a base of marl and limestone, creating the ideal conditions for growing highly expressive grapes.
The grapes are hand-harvested and fermented in oak barrels with indigenous yeasts. The wine undergoes 12 months of élevage in oak barrels, 40% of which are new, and a small part in stainless steel. The final maturation is done in stainless steel for 6 months, allowing for careful maturation while preserving the freshness and aromas of the terroir.
Tasting Notes
This Premier Cru reveals an impressive combination of class, perfectly balanced fruit, and deep terroir expression. The privileged exposure of the vines provides great power to the wine, but the shade from the slope of Corton mitigates the effects of the morning sun, bringing freshness to the overall profile. On the palate, the wine's creamy texture is quickly balanced by vibrant acidity and a mineral richness from the calcareous marl, leading to a long and refreshing finish.
Certification
Certified Organic (Ab Agriculture Biologique)
Food Pairings
Ideal for grilled meats, mushroom dishes, wild mushroom risottos, and aged cheeses. A versatile wine that pairs beautifully with dishes of intense flavor and great complexity.
Production
The limited 2023 production makes this wine a true Burgundy gem, rare and sought after by collectors.
